Job Description:

Who we are: Gallery Restaurant is a Forbes four-star restaurant Exuding a lovely ambiance and al fresco dining. The menu changes seasonally to provide the freshest in-season ingredients. Gallery's specialties include seasonal entrees and fresh seafood.

What we are looking for: We are looking for a Chef De Cuisine that has a minimum of 6 years' experience in a 4 Diamond or 4 Star Hotel. Has the ability to manage staff, train and inspect the performance of assigned kitchen staff, ensuring that all procedures are completed to standards of the Gallery Restaurant.

Job Duties

-Supervises the production, preparation and presentation of all food as assigned by the Executive Chef to ensure that a quality, consistent product is produced.
-Assist where necessary to ensure optimum service to Gallery Guests.
-Monitors and controls the maintenance and sanitation of the kitchen and equipment to ensure a healthy and sanitary work environment.
-Attend weekly meetings with the Executive Chef, F&B Director and Director of Operations to discuss upcoming business changes, forecasts, etc.
-Expediting required breakfast, lunch and dinner service: observe and communicate with Front of the House management and waitstaff on service times, correct food orders, food quality and guests feedback.
-Monitors and controls all labor and food costs through scheduling, training, and supervising the production of food to ensure budgets are met while quality is maintained.
-In the absence of the Executive Chef, collaborate with the other culinary department heads to monitor, maintain and assume normal responsibilities of the kitchen operations.
-Assists in creating and planning menus and daily specials.

Note: May be assigned other duties by supervisor or Manager

Education and Experience

-High School Diploma or GED
-4-year culinary degree from an accredited institution
-4-year culinary apprenticeship will be considered
-4-6 years of related culinary experience in a 4 Diamond or 4 Star Hotel or Restaurant
-Supervisory experience
-ServSafe certification

Skills & Abilities

-Advanced knowledge of the principles and practices within the food profession
-Excellent time management and organizational skills
-Excellent verbal and written communication skills
-Ability to pay close attention to detail
-Ability to work in a fast-paced environment
-Ability to work a flexible schedule that includes evenings, weekends, and holidays

Physical Requirements

-Ability to stand and move about kitchen for extended periods, walk, sit, kneel, talk, hear, grasp, and perform repetitive motions.
-Ability to smell and taste to test food for monitoring and feedback
-Ability to push, pull, lift, carry or otherwise move objects throughout course of shift, including food products and small equipment up to 75lbs.
